1 onion, diced
salt and black pepper to taste
1 medium sized broccoli
1 cup almonds (soaked for at least 3-4 hours)
1/2 cup celery, chopped
3 cups water
2 tbsp garlic, minced
1 tbsp olive oil
for garnishing: 1 tbsp soaked, peeled almonds (slivered)
In a pan add olive oil, diced onion, garlic, and celery.
Saute for 2 minutes and set aside.
Cut the broccoli into small florets.
Pressure cook the broccoli giving only 1 whistle.
Peel the soaked almonds.
Blend the almonds and broccoli and sauteed mixture together (you can add about 1/2 cup water while blending).
Transfer this puree into a pot. Add the remaining water, salt, and pepper and bring it to a boil.
Garnish with slivered almonds. Serve hot.
