for making the vada: 1 cup urad dal (overnight soaked), 1 tsp salt, 1/2 tsp cumin seeds, 1/2 tsp ginger finely chopped, 1/2 tsp finely chopped green chilli, oil for frying, water to blend, 1 bowl of lukewarm water, 1 pinch of salt
for making the sweet curd: 2 cups of plain curd, 4 tbsp sugar, 1/2 tsp cumin powder, 1 pinch of black salt
other ingredients: 1 cup dates imli chutney, 1 cup green chutney, 1/2 tsp cumin powder, 1/2 tsp chaat masala, 1 handful of pomegranate seeds, 1 handful of chopped coriander leaves
Making the vada: First strain the water from the soaked urad dal. Blend finely without water, if needed add a dash of water to it.
After blending to a fine paste beat it with your fingers in a clockwise & anti-clockwise motion until the mixture turns fluffy.
In the mixture add salt, cumin seeds, ginger & green chilli and give it a mix.
Heat some oil in a kadhai & slowly drop small balls of this mixture in it and fry until both sides turn light brown.
Prepare lukewarm water, and add a pinch of salt to it. After cooling down the vadas put them in the water. for at least 10 minutes.
Making the sweet curd: In a separate bowl add the plain curd, sugar, cumin powder & a pinch of black salt and blend it until turns flowy.
Assembling the dahi bhalla: Squeeze the bhalla lightly. In a plate first place the Bhalla.
Add some of the sweet curd mixtures, dates imli chutney & green chutney on top.
Now sprinkle with some cumin powder & chaat masala.
Add some pomegranate seeds & coriander leaves on top to finish it off.
