1/3 cup fresh mint leaves
1 green bell pepper chopped into 1-inch pieces
2 cups halved cherry tomatoes
1 tsp feta cheese
1/3 cup thinly sliced red onion
1/3 cup pitted olives (optional)
1 cucumber (diced)
1/2 tsp oregano
for dressing: 1/2 tsp mustard powder, 1 tsp olive oil, 4-5 crushed garlic pods, & salt & pepper to taste
On a large platter, arrange all the diced & sliced vegetables.
Mix well all ingredients of the dressing in a separate bowl.
Now, drizzle the dressing on the vegetables and toss. Add the feta cheese & olives too.
Sprinkle the oregano and top with mint leaves
