1 tsp kasuri methi
1-inch stick of cinnamon
salt to taste
for paste: 2 tsps oil, 1 onion (thinly sliced), 3 cloves garlic, 1-inch piece ginger, 2 tomatoes (finely chopped), 8 whole cashews
2 cups soya chunks
1 bay leaf (tej patta)
1 tsp kashmiri chilli powder (optional)
one-fourth cup curd
1 cup water
1 tsp oil
1 tsp cumin seeds
1 tsp coriander powder
1 onion (finely chopped)
½ tsp turmeric powder
Firstly, wash the soya chunks thoroughly.
Now, boil soya them for 8-10 minutes and transfer them to a bowl of cold water.
Allow to rest for 10 minutes and squeeze completely.
For the paste: Heat oil in a kadai. Saute the onion, ginger, and garlic.
Add the tomatoes, and cashews too, and saute well.
Cool & blend into a smooth paste. Keep aside.
In the kadai, heat the remaining oil & add cumin, bay leaf, and cinnamon stick and saute.
Then add the chopped onions and saute.
Also, add chili powder and turmeric.
Now add prepared onion-tomato masala paste and saute.
Add the coriander powder & salt.
Next, add water and curd. mix well.
Now add squeezed soya and cover the kadai. simmer for 10 minutes.
Later add kasuri methi finally, mix well, and serve.
