2 tsp oil

5 to 6 curry leaves

1/4 tsp turmeric powder

1/4 cup soya granules

1 tsp mustard seeds

1/2 onion

salt as required

1 tsp lemon juice

1/4 cup beaten rice (poha)

2 tbsps finely chopped carrot

2 tbsps finely chopped beans

2 tbsps boiled peas

1/2 small lotus stem (finely chopped)

2 tsp milk (for boiling the lotus stem)

1/2 green chilli - finely chopped (optional)

1/4 tsp red chilli powder (optional)


Wash the poha & keep it aside in a strainer.

Soak the soya granules in hot water for 5-10 minutes. Squeeze and drain the excess water.

Boil the lotus stem for 3-4 minutes in a mix of milk & water to clean it well.

Heat oil in a pan and splutter mustard seeds, curry leaves & green chilli.

Now add all vegetables to the pan and saute.

Add soaked soya granules, poha, salt, turmeric powder, and red chilli powder.

Stir the ingredients well for 2-3 minutes.

Plate the soya poha in a bowl and squeeze lemon over it.

Serve hot!
