Spinach Makhana

1 tsp olive oil

1/2 cup chopped spinach leaves

1/4 cup foxnuts/makhana

1 small onion (sliced)

1 tomato (sliced)

1 tsp turmeric powder

salt and pepper as per taste

1 tsp coriander powder

1 green chilli (optional)

1 tsp ginger garlic paste

1 cup water or vegetable stock


Heat oil in a saucepan

Fry cumin seeds, onion, ginger, and garlic paste, and green chilies

Add chopped spinach along with the turmeric & coriander powder.

Cook until the spinach is half done. Cool it and blend it into a fine paste

In another pan, dry roast the makhana

Boil the spinach paste with 1 cup of vegetable stock or water

Simmer for a few minutes

Now add roasted makhana and simmer again for a few minutes

Take off the pan and enjoy
