1 bowl chicken stock
2 tsps olive oil
2 shallot onions, chopped
4 medium-sized potatoes
1 bunch of spinach leaves
50 grams of chicken shreds
salt & pepper to taste
Saute the onion in olive oil along with a pinch of salt and pepper till translucent.
Add the chicken stock and potato and allow it to boil, until the potatoes are cooked.
Once cooked, cool & blenderize the soup to a thick consistency.
Add chopped spinach leaves and allow it to simmer for 2-3 minutes.
Once done, adjust salt & pepper to taste.
Add shreds of chicken and serve hot!
