egg & methi bhurji
A delicious iron rich dish that can be enjoyed for breakfast or as a side with some rice and curry.

1 chopped onion
100g methi
1/2 tbsp garlic(grated)
1/2 tsp ginger(grated)
1/2 tsp cumin seeds, pinch of hing and 1 tsp coriander seeds
1/2 tsp garam masala powder
salt to taste
coriander leaves for garnish
4 egg whites
red chilli powder to taste
1/2 tsp turmeric
1 green chilli
1 chopped tomato
Heat ghee/oil in a pan.
Saute cumin seeds till they change colour.
Saute onion, green chillies and garlic.
Saute tomatoes and garlic with salt, red chilli powder, coriander seeds and turmeric powder.
Add methi leaves and cook till they wilt. Separate yolk from eggs. Add to the mixture and whisk till they cook.
Add garam masala powder.
Mix and serve with the garnishing of coriander leaves.
