thai raw papaya & carrot salad
This refreshing, crisp & healthful salad is sure to put some pep in your step.

10 Ingredients
1 cup raw papaya juilenned
1/2 cup carrot julienned
2 tbsp finely chopped spring onion
1 green/red chilli (optional)
1 tbsp vinegar
1 tsp chopped garlic
8-10 basil leaves
salt to taste
3-4 tsp roasted peanuts (crushed)
juice of 1 lemon
In a bowl, add 6-8 ice cubes & 1/2 cup chilled water. Add the papaya & carrots into this & let it rest until the dressing is ready.
For the dressing: In a mortar, add the green/red chilies, basil leaves, vinegar, chopped garlic, salt & lemon juice. Pound well using the pestle.
Remove the papaya & carrots from the water & mix them with the dressing. Mix in the peanuts.
Garnish with spring onions before serving.
