sprouts palak appe

1/2 tsp fruit salt (eno)
1/2 cup grated carrot
1 onion finely chopped
1 tbsp oil
150g mixed sprouts
2 tbsp poha
2-3 pods of garlic
1 green chilli, finely chopped
1.5 cups chopped spinach
2 tbsp boiled corn
Wash and soak poha for 30 minutes.
Blend together soaked sprouts, and soaked poha with ginger, garlic, and green chillies with water (as required) to make a dosa-consistent batter.
Add in the chopped spinach, carrot, onion, and corn and mix well.
Finally, add the eno. Pour 1 tsp water on the eno and then mix into the batter.
Grease the appe pan or idli pan with little oil. Fill the pan with the batter, cover and cook for 5 minutes and then flip the appe on the other side and cook well for another 5 minutes or until golden brown.
Serve hot with coriander/ your favorite chutney.
