cauliflower nuggets
A crispy and toasty vegetarian alternative to traditional chicken nuggets.

7 Ingredients
½ cup breadcrumbs + 1/2 cup boiled and mashed kidney beans
1 teaspoon garlic powder
1 teaspoon dried parsley
1 whole egg
salt to taste
2 cups cauliflower florets (1-inch)
¾ cup crumbled paneer + 1/4 cup boiled potato
Preheat the oven to 400 degrees F.
Prepare the cookie baking sheet.
Steam the cauliflower florets until they are tender. Dry them by dabbing them on a cloth to remove any moisture.
Chop the cauliflower into small pieces.
In a bowl, mix the cauliflower and all the other ingredients and mix. Add the breadcrumbs to remove any remaining moisture.
Prepare nuggets, by pressing small portions of the mixture into the shape of a cookie.
Place the nuggets on the sheet and bake for 17 minutes. You can grill it on a pan too.
Serve with green chutney.
